钙果仁活性肽的制备及其体内抗氧化活性评价

摘要 利用碱性蛋白酶、中性蛋白酶和胰蛋白酶对钙果仁蛋白进行三酶复合分步水解制备活性肽,通过给正常小鼠和模型鼠灌胃不同剂量的钙果仁活性肽来研究其对试验小鼠的抗氧化作用。结果表明,经三酶水解后的钙果仁活性肽有较好的清除DPPH·自由基能力,其IC50值为1.06 mg/mL。另外,活性肽高剂量组还能够显著提高正常小鼠以及模型鼠血清、肝脏和肾脏中SOD和GSH-PX的活力,同时可显著降低其血清和肝脏中MDA的含量,但对降低肾脏中MDA的含量作用不显著,说明钙果仁活性肽可清除自由基对机体的损害,在小鼠体内有一定的抗氧化作用。 Kernel of Cerasus humilis protein were hydrolyzed by three kinds of enzymes including alkaline protease, trypsin and neutral proteinase. Kernel of Cerasus humilis peptide of different concentrations were gaved in the mice. Determined the antioxidant of the normal mice and model mice by analyzing the body weight,the SOD activity,the GSH-PX activity and the MDA concentration in serum,liver and kidney of mice. Results suggest that the kernel of Cerasus Humilis peptides had a relatively high level of DPPH radical scavenging activity with the IC50 value was 1.06 mg/mL. The high dose peptide could significantly increase the SOD and GSH-PX activity in serum,liver and kidney and could significantly reduce the concentration of MDA in serum,liver (P〈0.05),but the effect on MDA in kidney was not significantly.
