定西市马铃薯主食化新品种营养品质分析 被引量:4

Nutritional Quality Analysis on New Potato Staple Food Varieties in Dingxi City

摘要 为探讨不同品种的营养品质,筛选马铃薯主食化加工的区域适宜品种,分别采用减压干燥法、旋光仪法、3,5-二硝基水杨酸(DNS)比色法、双缩脲法、高效液相色谱法(HPLC)、电感耦合等离子体-发射光谱法(ICP-OES)等检测方法,对定西市引进试种的10个品种马铃薯样品的干物质、淀粉、还原糖、蛋白质、维生素C等一般营养成分及矿物元素进行了分析测定。结果表明:10个马铃薯品种中,AGRICO-5淀粉含量及干物质含量明显高于其他9个品种,蛋白质、维生素C及钾、镁、钙和铁等矿质含量均处于较高水平,与对照品种大西洋接近,而还原糖含量显著低于其他9个品种及对照,作为主食化品种具有较好的加工品质,符合营养要求,适宜在本地进行区域推广。 In order to research nutritional quality of different varieties potato,the suitable potato cultivars as the staple food develepment were introduced.The dry matter,starch,reduceing sugar,protein,vitamin C and mineral elements of 10 diferent varieties potato from domestic were compared by decompression drying method,rotator method,3,5-dinitrosalicylic acid(DNS)colorimetry,double condensation urea method,HPLC,inductively coupled plasma-emission spectrometry(ICP-OES)and other detection methods.The results showed that the starch and dry matter content of AGRICO-5 in 10 potato varieties were significantly higher than those of 9 other varieties,and protein,vitamin C,potassium,magnesium,calcium and iron was at a high level,which was close to that of the control sample Atlantic Ocean.The content of reducing sugar was significantly lower than that of other 9 varieties and controls.As a staple food,it has a good processing quality and meets the nutritional requirements,and is suitable for local promotion.
