1-MCP对采后台湾青枣果实膜脂代谢的影响 被引量:8

Effects of 1-MCP Treatment on Metabolism of Membrane Lipids in Harvested Ziziphus mauritiana Lamk. Fruit

摘要 以"中青"台湾青枣果实为材料,研究1-甲基环丙烯(1-MCP)对采后台湾青枣果实磷脂酶D(PLD)活性、脂氧合酶(LOX)活性和膜脂脂肪酸组分的影响。结果表明:台湾青枣果实脂肪酸组分按含量从高到低依次为油酸(C_(18:1))、花生酸(C_(20:0))、棕榈酸(C_(16:0))、亚麻酸(C_(18:3))、硬脂酸(C_(18:0))、十七烷酸(C_(17:0))。1-MCP处理抑制了采后台湾青枣果实PLD、LOX活性的升高,延缓了膜脂不饱和脂肪酸的降解和饱和脂肪酸含量的上升而引起的膜结构和完整性的损伤,维持较高的细胞膜膜脂脂肪酸不饱和指数和不饱和度;同时1-MCP处理保持了采后台湾青枣果实较高的细胞能荷值,增强了细胞膜的修复能力,最终延缓台湾青枣果实衰老导致的细胞膜结构的破坏。 Effects of 1-methylcyclopropene(1-MCP) treatment on activities of phospholipase D(PLD), lipoxygenase(LOX) and fatty acid constituents in membrane lipid in harvested Ziziphus mauritiana(Ziziphus mauritiana Lamk. cv.Zhongqing) fruit were investigated. The results showed that the major fatty acid component in Ziziphus mauritiana consisted of oleic acid(C18:1), followed by arachidic acid(C20:0), palmitic acid(C16:0), linolenic(C18:3), stearic acid(C18:0),margaric acid(C17:0). As compared with the control fruit, 1-MCP treatment could decrease activities of PLD and LOX,delay the decreases of unsaturated fatty acids like oleic acid(C18:1), retard the increase of saturated fatty acids such as palmitic acid(C16:0), maintain higher index of unsaturated fatty acids(IUFA) and higher unsaturation degree of fatty acids, as well as keep higher level of energy charge and more availability of energy involving in lipid cellular synthesis,which could retard the change of membrane properties, and delay the loss of cellular compartmentalization and ion leakage.
