摘要 本文概述了电化学传感器在植物油中合成抗氧化剂BHA、TBHQ、BHT检测上的应用。电化学检测法具有高效的选择性,良好的灵敏性,快速的检测性和较低的消耗性。此外,它还具有低检测限,样品回收率高等优点。油脂中的合成抗氧化剂多是酚类物质,而酚类物质属于电活性物质,应用电化学传感器对植物油中的抗氧化剂进行定性、定量检测具有广阔前景。 The application of electrochemical sensor in the detection of BHA, TBHQ and BHT that are added to vegetable oil was reviewed in this paper. Electrochemical detection method has the advantages of high efficiency and selectivity, good sensitivity, fast detection, and low consumption. In addition, electrochemical detection with low detection limit, high sample recovery rate, etc. Owing to oil antioxidants are phenolic compounds, while the phenols belongs to electroactive substances. Therefore, the application of electrochemical sensor for the detection of antioxidants in vegetable oil has broad prospects.
