摘要
以米糠为材料,用95%乙醇、乙酸乙酯、丙酮、95%乙醇-石油醚、蒸馏水等不同提取液,在超声波辅助下提取米糠黄色素,研究了温度、光照和金属离子等因素对米糠黄色素稳定性的影响。结果表明,使用乙醇作为提取溶剂时,黄色素提取率达76.40%、溶剂回收率达48.80%,从溶剂成本和感官评价综合考虑来看,乙醇作为溶剂时提取米糠中黄色素效果最优;光照和高温会造成黄色素分解,在实际生产中应当在避光阴暗处储存,同时避免使用铝罐、铜罐储存。
The rice bran was used as the material to examine the extraction effects of yellow pigment by means of ultrasonic with different extracts such as 95 % ethanol, ethyl acetate, acetone, 95 % ethanol-petroleum ether and distilled water. The effects of temperature, light and metal ions were also studied on the stability of rice bran's yellow pigment. The results showed that when ethanol was used as the extraction solvent, the extraction rate of yellow pigment was 76.40 % and the solvent recovery rate was 4 8.8 0 % . In view of the solvent cost and sensory evaluation, the effect of extracting yellow pigment from rice bran was the best when ethanol was used as solvent. Light and high temperature will cause yellow pigment to decompose. In actual production, it should be stored in dark places and avoid the use of aluminum cans and copper cans for storage.
