An investigation and analysis of food poisoning caused by Staphylococcus aureus

目的通过对一起食物中毒事件的过程调查,为基层疾控机构参与现场调查工作提供方法指导,并为安全监管部门提供数据依据。方法对食物中毒事件就餐人员进行追踪,对相关检材进行梳理排查,并采集可疑样品进行实验室检测,根据检测结果和临床表现分析事件发生原因。结果从鱿鱼、肥牛、鸭脯等食材中分离出了金黄色葡萄球菌,就餐者食用了被金葡菌污染的食材后,造成17人出现腹痛腹泻、发热、恶心、呕吐等不同程度的中毒症状,中毒人员经对症治疗均已康复。结论根据流行病学调查,结合患者临床表现及实验室检测结果等综合分析,这是一起由金黄色葡萄球菌污染食物所致的食物中毒,提醒政府相关部门,必须高度关注食品安全和卫生。

Objective By investigating the process of a food poisoning incident, this paper provides methodologicalguidance for grass -roots CDC agencies to participate in on -site investigation and data basis for safety supervisiondepartments. Methods The diners of food poisoning incident were tracked, relevant samples were sorted out, and suspicioussamples were collected for laboratory testing, and the causes of the incident were analyzed according to the test results andclinical manifestations. Results Staphylococcus aureus was isolated from squid, fat cattle, duck breast and other food. Aftereating the food contaminated by Staphylococcus aureus, 17 people suffered from abdominal pain, diarrhea, fever, nausea,vomiting and other toxic symptoms to varying degrees. All the poisoned persons recovered after symptomatic treatment.Conclusion According to epidemiological investigation, a comprehensive analysis was conducted combined with clinicalmanifestations and laboratory test results. This is a food poisoning incident caused by Staphylococcus aureus contaminatedfood. It reminds relevant government departments that the safety and hygiene of food must be paid great attention.
