摘要
以鸡骨为原料,研究了蒸汽爆破技术提取鸡骨中营养物质的工艺。影响蒸汽爆破技术提取鸡骨架中营养物质的因素主要有:蒸汽压力、保压时间。以蛋白质提取率、脂肪提取率和感官评价为指标,确定蒸汽爆破处理技术提取鸡骨架中营养物质的最佳工艺条件为:蒸汽压力2. 4MPa、恒压时间680s。
The process of extracting nutrients from chicken bone by steam blasting was studied. The main factors affecting the extraction of nutrients in chicken skeleton by steam blasting technology are steam pressure and pressure retention time. The best process condition for extracting nutrients from chicken skeleton by steam blasting using protein extraction rate, treatment was determined to be 2.4MPa and 680s constant pressure time fat extraction rate and sensory evaluation as indicators.
