摘要
为分析山东省城乡居民的鸡肉及其制品消费特征,对其消费状况进行问卷调查。以青岛、济南、潍坊、临沂、聊城五地市的消费者为对象,对鸡肉的购买地点、购买形式、食用频率、消费地点、冷鲜鸡肉的消费心理、深加工制品的消费心理和对禁售活禽的态度等方面展开问卷调查。结果显示:各地消费者在农贸市场购买活鸡比例最大,绝大部分人倾向购买整鸡,食用频率最高的为青少年,主要在家里烹饪,愿意尝试购买冷鲜鸡肉的比例为68%,偏好的深加工制品主要为酱卤熏类和调理类制品,50岁以上人群反对禁售活禽比例最大。因此建议通过网络销售等新型模式降低直销点的成本、提高生产要求、加强监管力度,严格保证新鲜鸡肉的质量安全,对鸡蛋进行深加工并进一步促进鸡蛋及其制品的消费市场。
To investigate chicken and chicken products consumption characteristics and its influence factor, we conducted a questionnaire survey that focused on places for buying chicken, parts of chicken, eat frequency, places for eat, consumption characteristics on fresh chicken and chicken products, attitude to no live-bird in the cities of Qingdao, Jinan,Weigang, Linyi and Liaocheng.The results showed that farmer ' s market were the main places for buying chicken in these cities,almost consumers willing to buy complete chicken, the highest eat frequency focused on teenagers, eat in home is the most people ' s choice, the proportion of buying fresh chicken is 68%, the prefer chicken products are sauce,halogen,smoked and prepared products, the most proportion of against no live-bird is the people over50 yeas old.It was suggested that the chicken distribution channel should be increased,buying less and more frequently advocated. Meanwhile, it was necessary to strengthen the quality and safety management, reduce production costs of chicken.
