摘要
涪陵榨菜是享誉中外的绿色佐餐食品,自清代末年行销商品市场以来,已从家庭小作坊生产的小商品,发展成有年产值超过100亿元的大产业,品牌价值高达121亿元。涪陵榨菜传统制作技艺入选第二批国家级非物质文化遗产,是整个产业的核心竞争力,既是生产中的'活'的形态,又是传统中最脆弱、易消失的部分。作为涪陵榨菜传统制作技艺的第六代传承人,万绍碧出身于榨菜加工世家,从事榨菜加工生产40多年,在对榨菜传统制作技艺精心保护、大力传承,锐意创新等方面,做出了积极的贡献。
