阐述了面粉灰分的作用和作为面粉质量标准的不足之处 ;面粉色泽的作用和有关仪器的工作原理及测试结果 ,白度仪的缺点 ;数字式像点分析技术的原理 ,麸皮扫描和SPX斑点检验仪的测试结果和分析 ;小麦碾皮制粉和常规制粉的面粉应用像点分析技术测得的灰分、糊粉层、麸皮扫描百分数的累计曲线的分析。最后经过讨论提出
What this article presents are: function of wheat flour ash and its inadequacies as a criterion of flour quality determination; function of flour color and the working principles and measuring results of related instruments, and the disadvantages of whiteness colorimeter; the principle of digital image analysis, the analysis of the measuring results of Branscan and SPX Speak Expert ; and the analysis of the cumulative curves of ash, aleurone and Branscan percentage of the flours obtained from wheat debranning and regular wheat milling, which are measured via image analysis method. Finally, a discussion and three suggestions are made.
