摘要
对日本七鳃鳗肉中氨基酸及矿质元素进行了测定。结果表明 ;日本七鳃鳗肉富含多种氨基酸及矿质元素 ,所测的 1 6种氨基酸总和为 90 975 % ,8种必需氨基酸含量占氨基酸总量的 3 9 95 6% ,矿质元素K、Mg、Ca、Cu、Zn、Fe、Mn的含量分别为 9 5 41 6mg/g、0 95 72mg/g、0 3 80 9mg/g、0 0 0 5 4mg/g、0 1 2 5 8mg/g、0 4863mg/g、0 0 0 5 6mg/g。
Mineral and amino acid contents in the meat of Lampetra japonica were analyzed. The content of 16 amino acids analyzed constituted 90.975; eight essential amino acids constituted 39.956% of total amino acids. Contents of mineral elements K, Mg, Ca, Cu, Zn, Fe and Mn were 9.541 6, 0.957 2, 0.380 9, 0.005 4, 0.125 8, 0.486 3 and 0.005 6 mg/g respectively.
