香菜的平衡含水率测定试验研究

摘要 利用DL104型电热鼓风干燥箱试验装置,采用静态法分别测得香菜在温度为25℃和35℃、相对湿度为1 0%~9 5%范围内的解吸和吸湿平衡含水率数据,绘制了相应的香菜解吸和吸湿等温线,分析了温度和环境相对湿度对香菜平衡含水率的影响,确定了香菜干制品的安全贮藏条件。结果表明:香菜的平衡含水率存在吸湿"滞后"现象;环境相对湿度比温度对香菜平衡含水率的影响更大;当香菜样品干基含水率大于50%时,出现霉变现象;当环境相对湿度大于60%时,霉变现象严重。 In this paper,moisture absorption and desorption equilibrium moisture content of coriander were measured by the static method and the testing device of the DL104 type electric heating and air drying box while the environmental relative hu- midity changed from 10% to 95 % and the temperature was at different values such as 25℃ and 35℃. The moisture desorption and absorption isotherms of coriander were plotted,the effects of temperature and environmental relative humidity on the equi- librium moisture content of coriander were analyzed and the safe storage condition of dried coriander was determined. The rus- ults show that the equilibrium moisture content of coriander exists moisture absorption ' lagging' phenomenon,the envir- onmental relative humidity has more important influence than temperature on the equilibrium moisture content of corian- der,the mildew phenomena will appear when the dry base moisture content of the sample was greater than 50% and the mil- dew phenomena will become serious when the environmental relative humidity is greater than 60%.
