文化生态观观照下的地域黄酒文化考察——兼谈食学的研究路径

摘要 食学的研究方法近年来成为一关注点。许多专家认为是一门交叉学科,其研究需要围绕食本身而在更大的社会文化视野中展开。这一结论也适用于黄酒文化的考察。针对以往酒研究中地缘性与整体性缺乏的不足,在研究中借用文化生态学的概念,同时建立比较轴系,这样既有利于对地域黄酒文化内外系统的梳理,也有利于描绘以黄酒文化为核心的文化共生现象。这一研究方法强调了黄酒文化不是孤立的文化现象,而需要从文化生态整体的角度挖掘。这一研究的运用为了食学研究方法提供鲜明的个案,也与诸多专家的观念不谋而合。 The research methods of food science have become a focus in recent years. Many experts believe that it is an interdisciplinary subject and its research needs to focus on food itself in a larger socio-cultural perspective. This conclusion can also be applied to the investigation of yellow rice wine culture. In view of the shortage of geographic and holistic character in the previous wine research,the concept of cultural ecology was borrowed and a comparative axis was established in the study,which was beneficial to combing the internal and external systems of regional rice wine culture and depicting the cultural symbiosis with rice wine culture as the core. This research method emphasizes that rice wine culture is not an isolated cultural phenomenon,but needs to be excavated from the perspective of cultural ecology as a whole. The application of this study provides a distinct case for the study of food science and coincides with the ideas of many experts.
