六安瓜片烘焙机械与传统工艺的比较 被引量:2

摘要 传统六安瓜片制作烘焙环节中的手工拉老火工序,劳动强度大,茶叶断碎多,生产成本高。根据传统拉老火工艺原理和特点,研制了一款烘焙机械。通过试验对比,机械烘焙制作的六安瓜片,品质上接近传统拉老火制作的六安瓜片,成茶率可提高8.0%,每千克成品茶在成本上节约5.69元,且有利品质稳定和清洁化生产,具有很好的推广价值。 The traditional Lu’an Guapian Tea use Lalaohuo process in the baking process.The labor intensity is high,the tea is broken,and the production cost is high.According to the principle and characteristics of the traditional Lalaohuo process,a baking machine was developed.Through experimental comparison,the Lu’an Guapian Tea made by mechanical baking was close to the traditional Lalaohuo process,the ratio of obtained tea could be increased by8.0%,the cost per kilogram of dried tea was saved by 5.69 yuan,and the quality was stable and clean.Above all,this baking machine have a good promotion value.
