摘要
生姜系常见的药食同源类作物之一,长期以来被作为各类食品、药品配方成分广泛使用.综述了生姜中有效成分种类和有效成分的主要生理功能,有效成分的提取、分析方法和生姜的开发利用现状.在此基础上提出了生姜的开发利用途径和方法.
As one of the medicine food homology crops,zingiber officinale Rosc has long been utilized as ingredients for food and medicine.This paper describes its main active components and their major physiological functions,the extraction methods,and the development and utilization of zingiber officinale Rosc for functional food.Based on this,its utilization methods and exploration potential are summarized.
