摘要
花魔芋和白魔芋精粉中均含有 18种水解氨基酸和 18种游离氨基酸 ,前者水解氨基酸的总量为 2 .4 4 % ,其中必须氨基酸质量分数为 0 .6 2 % ,游离氨基酸总量为 1.10 % ,其中游离必须氨基酸质量分数为 0 .33% ;后者水解氨基酸总量为 2 .0 1% ,其中必须水解氨基酸质量分数为 0 .5 6 % ,游离氨基酸总量为 0 .4 1% ,其中必须游离氨基酸质量分数为 0 .13%。提示白魔芋和花魔芋精粉中氨基酸含量略有差异 ,但此差异不大 ,其品质 。
It was found that there were 18 hydrolytic and free amino acids in the refined powder of Amorphophallus konjac and A. albus. Total Contents of 18 hydrolytic amino acids, hydrolytic essential amino acids, 18 free amino acids and free essential amino acids were 2.44%,0.62%,1.10% and 0.33% respectively in the former and 2.01%, 0.56%, 0.41% and 0.13% in the later. Their nutritional guality and other special properties were mainly depended on the content of KGM in the refined powder of Amorphoallus konjac and A. albus .
