摘要
以姜黄为原料 ,用蒸馏水浸泡提取天然黄色素 ,对姜黄色素的稳定性进行详细研究。结果表明 ,该色素水溶性好耐高温性好 ,在中性和弱碱性条件下 。
The extraction of purple pigment from Turmeric and its stability have been studied in the paper.The pigment is stable under certain acidic condition and worth developing in food industry.\;
