摘要
红曲红色素与连二亚硫酸钠在碱性溶液中反应,制得水溶性红色素。结构分析认为是红曲红色素分子中的内酯水解,同时引入磺酸基。对其性质实验结果表明,它的最大吸收波长是476nm,水溶性好,具备了食用色素的优良特性。
The water - soluble Monascus yellow pigment was prepared from the Monascus red pigment and sodium dithionite in base solution. The analyses of the structure suggested that it was formed by hydrolysis of the lactone in Monascus red pigment molecules and the induction of sulfonic group. The test of the properties indicated that it's maximum absorption was at 476nm and with good water soluble property, which kept the good properties as food pigment.
