摘要
利用壳聚糖、壳聚糖/纳米Si Ox及壳聚糖/纳米Si Ox/单甘酯复合涂膜剂对丹东河口燕红桃进行涂膜处理,通过对硬度、含水量、维生素C、总糖含量及三种涂膜剂抑菌性的测定,比较三种涂膜剂的保鲜效果。结果表明:壳聚糖/纳米Si Ox/单甘酯复合涂膜的保鲜效果最好,室温下可以延长燕红桃的保鲜期1个月。
The preservation effect of three kinds of coating agent produced with chitosan,chitosan / nano Si Ox and chitosan / nano Si Ox / monoglyceride to Yanhong Peach in Dandong was studied. The hardness,water content,vitamin C content,total sugar content and bacteriostasis were tested. It was found that chitosan / nano Si Ox / monoglyceride composite coating agent had the best fresh- keeping effect,which could prolong the usable life of Yanhong Peach for one month.
