摘要 根据流行病学研究提出肉类 (特别是红肉 )使癌症 (特别是结肠癌、乳腺癌和前列腺癌 )危险性增加的假设。肉类及肉制品是人体蛋白质、某些微量营养素和脂肪的重要来源。高脂摄入与多种疾病 (包括癌症 )相关。据报道 ,肉蛋白促进癌症发生。但是 ,肉类 (包括肝脏 )不仅含脂肪和蛋白质 ,还含有大量必需营养素 (维生素A、维生素B12 ) ,肉类的微量营养素不仅含量高 ,生物利用率也高 ,是某些微量营养素 (叶酸、硒、锌 )的主要来源。尤为重要的是 ,据报道 ,维生素A、叶酸和硒对结肠癌、乳腺癌和前列腺癌有预防作用。总之 ,肉类含有一些尚不确定的促癌因子和大量保护因子。后者能由含水果蔬菜的膳食优化 ,水果蔬菜中含有上百种已知生物活性成分 ,其中多种成分在体外实验中表现出抗氧化作用和抗癌作用。
