Study of The Effects of N and Zn Fertilizers on the Aroma of Rice

本文研究了京香1号的挥发物质的构成,并阐明2—乙酰—1—吡咯啉是水稻中的一种重要的香味成分;开发质量检测的快速方法—顶空分析;对不同品种的该物质浓度作了比较;另外还做了 N、Zn 肥对香味效应的研究。

Volatile components of Jing-Xiang-1 were studied.The 2-Acetyl-1 pyrrolinewas identified as an important aroma component of rice.The quick methodology of theHeadspace Vapours for determining the qualities of rice was developed.The concentra-tion of 2-Acetyl-1 pyrroline was determined in cooked rice of different varieties.Theeffects of N and Zn fertilizers on the aroma of rice was studied.
