瘦肉型猪育肥后期不同饲喂方式对肉质的影响 被引量:10

Effect of the Different Feeding Regimes on Meat Quality in the Latter Finishing Period in Lean Pigs

摘要 试验以瘦肉型杜长上 (杜洛克× (长白×上海白 ) )三元杂交猪为试验动物 ,采用试验猪场育肥后期日粮 ,在猪平均体重达到 55kg以上时 ,采用自由采食和限制饲喂 (限制日采食量 15% )两种饲喂方式 ,最终同期屠宰 ( 4 5d后 )。研究结果表明 :1.与自由采食相比 ,限制饲喂未显著改变肌肉系水力、熟肉率、p H值、肉色和剪切力 ( P>0 .0 5) ,但除剪切力之外的上述各项指标值均略有增加。 2 .与自由采食相比 ,限制饲喂未显著改变肌肉中水分、粗脂肪、粗蛋白、灰分、钙、磷的含量 ( P>0 .0 5) ,但粗脂肪含量略有下降。 3 .两种饲喂方式下肌纤维直径差异不显著 ( P>0 .0 5)。 4.背最长肌和半腱肌对限饲的反应程度不一致。 Effects of two feeding regimes, ad libitum and restricted feeding(85% of ad libitum) on meat quality was studied in lean pigs of Duroc×Landrace×Shanghaiwhite three way cross pigs, beginning from over 55 kg body weight. All the animals were slaughtered after forty five days. Results suggested that restricted feeding had a little improvement on all analyzed meat eating traits besides the shear force, although the differences of water binding capacity, cooking percentage, pH values, meat color and shear force of two feeding regimes were not significant ( P >0.05). The differences of the content of moisture, crude protein, crude fat, crude ash, Ca and P between two feeding groups were not significant ( P >0.05), but the content of crude fat decreased a little when animals were restrictively fed. Feeding regimes had no effect on muscle fiber diameter ( P >0.05). Longissimus dorsi and Semitendinosus had the different reflectance under ad libitum feeding regime.
