益生菌的生理作用及其在乳制品中的应用现状 被引量:3

摘要 益生菌在人体肠道内定殖,并起着调节免疫,增强人体吸收,降低胆固醇及血压等生理功能,而乳制品是益生菌的最佳载体。为了正确发挥益生菌在乳制品的功能从而增强人体健康的益生作用,综述了益生菌的概念、常用菌种、选择标准、益生菌的生理作用及益生菌在乳制品中的应用现状。
