摘要
对复合酯化酶生态菌剂进行了应用试验,实验结果表明,复合酯化酶生态菌剂的用量为3.5%时,发酵周期15d,平均出酒率为38.8%(v/v),取优率比发酵期为45d的对照池高出7.3个百分点。与大曲混合使用效果更为理想。
The application of complex esterifying enzyme microecology fungus was tested.The experiment results showed that the dosage of complex esterifying enzyme microecology fungus was3.5%,fermentation times15d,the average liquor yield was38.8%and the quality liquor rate was excessive7.3%than the comparison pool which with45d fermentation time.The using effect was better when the complex esterifying enzyme microecoloyg fungus and Daqu was commixly used.
