This paper summarized the achievement of antioxidants in source of raw materials,types of antioxidants,models of evaluation,methods of extraction and separation,identification of structure and the relationship between structure and antioxidant capacity in nearly 20 years.In addition,some remained and to be studied questions were discussed.
