摘要
大豆肽是大豆蛋白经水解而得到的低分子肽混合物。综述了其生物活性、营养特性、加工性能及新型的提取方法,并对其发展趋势进行了分析。
Soybean peptides are mixture of small molecular peptides hydrolyzed from soy protein.In this paper,their biological activity,nutritional characteristics,processing performance and new methods of extracting were reviewed.Their development trend were also analyzed.
