摘要
以富锗酵母泥为基料,对其进行预处理、自溶、加热灭酶和干燥得到成品富锗酵母蛋白粉。通过对自溶条件的优化,得出了生产富锗酵母蛋白粉的最佳生产工艺条件。针对成品进行了成分分析和急性毒性试验。结果显示,经5倍体积的水洗涤3次,在50℃、20h、pH 5.0、加入2%NaC l条件下进行自溶,然后在95℃灭酶15m in,鼓风干燥所得的产品蛋白质含量高达56.86%,氨基酸含量丰富,其LD50值>15,000mg/kg,被认为基本无毒食品。
In this paper,Enriched-germanium yeast mud was taken as the main raw material to produce the high-protein powder enriched-germanium yeast through pretreating,self-solution,eliminating enzyme and drying.The best production conditions was assured by self-solution optimization.Then,composition analysis and acute toxicological tests were taken.The experimental results showed that five times the volume of water washing three times,autolysising in 50℃ and pH 5.0 for 20h by adding 2% NaCl,and then eliminating enzyme in 95℃ for 15 minutes,blasting drying,the best finished product was obtained.It's protein content was up to 56.86%,contained abundant of amino acids.LD50 of enriched germanium yeast protein powder was greater than 15,000 mg/kg,so was basically a kind of non-toxic food.
