摘要
研究了红酵母色素的光稳定性、热稳定性、储存时的最适pH值、山梨酸钾对其保存的作用以及红酵母色素的抗氧化性质,结果表明:红酵母色素的热稳定性和光稳定性较差,红酵母色素保存的最适pH值为6.0左右,保存时添加一定浓度的山梨酸钾对防止其氧化有一定作用。红酵母色素对3种氧自由基都有清除作用,其中清除O2-的能力最强,清除.OH的能力次之,清除H2O2的能力最弱。
In this manuscript,Rhodotorular glutinis pigment photostability,thermal stability,optimum pH value for storage,function of potassium sorbate during storage and its antioxidation activity were studied.The results showed that the stability of pigment could reduce quickly when it was directly exposed to heat and light.The optimum pH value for its storage was about 6.0,and potassium sorbate added with certain concentrate could protect the pigment from oxidating during storage.Rhodotorular glutinis pigment could scavenge the following 3 kinds of oxygen radicals.It exhibited the strongest scavenging activity against superoxide anion,then hydroxyl radical,and then hydrogen peroxide.
