摘要
以苹果为原料研制高纤维苹果汁和苹果醋,通过试验得出最佳工艺配方,高纤维苹果汁100mL,苹果醋5mL,柠檬酸0.25g,葡萄糖8.0g。可利用压榨后的苹果渣按1∶1与水混合后代替苹果原料酿制成高纤维苹果醋保健饮料。
Apple was used as a raw material to produce high fiber apple juice and apple vinegar,then citric acid,glucose was mixed,the optimum process technique of apple vinegar was obtained through the test and a kind of new typical,fashionable and high fiber apple vinegar was produced.
