论述了特殊风味酱及保健酱的研发现状、产品特点和发展趋势。随着饮食行业的发展及人们生活水平的提高,酱类产品已经由传统的大豆酱发展成为具有各种风味和保健功能的复合型产品,将来的制酱工业还将继续朝着这样的方向发展,同时注重纯天然的绿色食品及适合各类人群食用的酱类产品。
The paper discussed the current state,the properties and the trend of the special flavor and healthy sauce.With the development of food industry and the improvement of people' living standards,the sauce products have been developed,from the traditional soybean sauce,into composite products with various flavors and healthful functions,which will also be the future trend of the sauce industry.And in the meantime,there will be more researches on the natural green food and sauce products suitable to various groups of people.
