对YC-X11型DVS发酵剂进行菌株的分离及初步的鉴定,研究发现,YC-X11型发酵剂由德氏乳杆菌保加利亚亚种、德氏乳杆菌乳亚种及嗜热链球菌3菌株组成。其中德氏乳杆菌乳亚种镜检为一较特殊纤细型长杆菌。

The bacterium of YC-X11 DVS starter culture was isolated and identified,the result indicated that the YC-X11 DVS starter culture was composed of Lactobacillus delbrueckii subsp,Lactobacillus helveticus and S.thermophilus,Lactobacillus helveticus is a special bacterium by lens examination and need identification ulteriorly.
