摘要
采用DPPH法测定纯生啤酒的抗氧化性,分析其对啤酒老化的影响。研究表明:纯生啤酒生产的各个阶段都能导致纯生啤酒抗氧化能力的变化,从而影响到纯生啤酒的老化速度,DPPH法能显著反映啤酒生产过程的抗氧化活性变化和老化趋势,是一种有效的评价啤酒老化程度的新指标。
DPPH method was adopt to measure anti-oxidation of draft beer,and the effect of beer staling on draft beer was analyzed.The results showed that: each stage in the production of draft beer can cause anti-oxidation changes,thus affected the staling speed.DPPH method can obviously reflect the staling trend and variations of antioxidant activity in the production of draft beer.And it was an effective index to evaluate the staling degree of draft beer.
