摘要 研究以玉米为原料,通过单因素试验和正交试验确定提取玉米黄色素的最佳工艺。结果表明:最佳提取条件:95%vol的乙醇为提取剂,提取温度75℃,提取时间2h,提取pH值为7,料液比(质量∶体积)1∶8。色素耐光性较差,但其耐热性较强,对酸、碱、还原剂、食品添加剂及Na+、K+等离子较稳定,对氧化剂及Al3+、Fe3+等离子不稳定。 The research was taking the corn as raw material,choosing the best extraction craft through single factor experiment and the orthogonal experiment to product maize yellow pigment,at the same time doing investigation of stability.The test results indicated that the best extraction conditions was as follows: taking 95% alcohol as extract,extraction temperature 75℃,extraction time 2 hours,the pH=7,the material fluid compares(the quality: Volume)1:8.The pigment light resistance was bad,but its thermal stability was strong.Maize yellow pigment was stable to acid,alkali,reducing agent,food additive,Na+ and K+,but unstable to the oxidant,Al3+ and Fe 3+.
