摘要
从醋醅和酿醋发酵液中筛选分离得到了一株耐高浓度醋酸菌株。通过大量的实验,建立了该菌体生长和产醋酸的动力学模型,其相关系数R均在0.99以上。同时考察了不同底物浓度对醋酸产量的影响,实验发现当底物乙醇浓度为5%vol时,醋酸产量最高,达到5.28g/100mL。另外,为了提高醋酸产量,在发酵过程采用补加乙醇的方法,发酵最终产酸10.53g/100mL,乙醇的转化率达到97.89%。
In this paper,the strains which endured high acidity were screened out from the fermentation liquid and solid fermentation substrate of vinegar.Studying on the fermenting characteristic,the kinetics models were established for microorganism growth and acetic acid yield.Their related coefficient R were all over 0.99.The effect of different substrate concentration and yield of acetic acid were studied.The study indicated that when substrate concentration was 5 percent(vol),the best efficiency of fermentation reaction was obtained to 5.28g/100ml.Furthermore,in order to increase yield of acetic acid,the experiment way was used by adding ethanol during the process of fermentation.At last the study indicated that the way is one of the effective methods to increase the output of acetic acid.Yield of acid and the ethanol conversion reached to 10.53g/100ml and 97.89% respectively.
