摘要
通过3,5二-硝基水杨酸法测定苹果渣中含3.02g/100g还原糖,直接称量法测定苹果渣中的水分含量为83.97%。对比分析酒精酵母、面包酵母、野生酵母等发酵菌种,确定相同条件下酒精酵母单细胞蛋白产量最多;酒精酵母在28℃、接种量为10%的培养基上培养5d,单细胞蛋白产量最高。
The article pointed out the quantity of sugar was 3.02g/100g by the 3,5-dinitro naphthol salicylic acid reagent method in the apple pomace.The content of the moisture was 83.97%.Through the analysis to beer yeast,bread yeast and wild yeast,it concluded the output of beer yeast was maximal at the same processing condition,which had the supreme output under the condition that ferment 5 days in 28℃,inoculation quantity of beer yeast 10%.
