摘要
对不同澄清剂在苦瓜酒的应用中进行了比较研究。结果表明:0.02%与0.06%的明胶与膨润土复配,澄清效果较好,澄清后的酒体稳定性增加。
Clarification effects of clarifier on Momordica charantia liquor were studied.The experiment showed that better clarifying effects could be obtained by composite clarifier of gelatin and bentonite,the proper use level of gelatin and bentonite were 0.02% and 0.06% respectively.Besides,the stability of wine body improved after the clarification.
