摘要
通过认识食品中影响微生物生长的因子,了解食品微生物对不同环境因子的反应,可延伸推断不同食品在不同状况下所生长的微生物。通过控制环境条件,使有害食品微生物的生长繁殖受到抑制,甚至被杀死;而对有益食品微生物,通过调节理化因素,使其得到良好的生长繁殖或产生有经济价值的代谢产物。
In this article,we studied the factors which affected microorganism growth,so found out the responses of food microorganism to different environ- mental factors.And then deduced which microorganism can grow under different conditions.Through control of environmental conditions,inhibited the growth of harmful microorganism,even was killed;at the same time,through adjusting physical and chemical factors,promoted growth of beneficial micro- organism,or producing metabolites which had economic value.
