摘要
本文作者介绍了超临界流体的特性 ,超临界流体萃取的基本原理、萃取工艺 ,超临界流体的选择 ,并对超临界流体萃取技术在食品工业中的应用进行了综述。
Characteristics of supercritical fluid,fundamentals and technology of supercritical fluid extraction,and selection of supercritical fluid are introduced.A review is given on the application of the supercritical fluid extraction to food industry in the paper.
