摘要
通过现代工技术手段 ,由微生物的某种特定功能 ,可以生产出人类所需要的保健产品。介绍了微生物工程在乳酸菌及其发酵制品 :膳食纤维、活性多糖、氨基酸、维生素、核苷酸、酶制剂、红曲米、糖醇、多不饱和脂肪酸、类胡萝卜素及活性微量元素开发中的应用。
Microbial engineering can be employed in health food production, by utilizing the specific function of microorganisms. This article reports the application of microbial engineering in the development of lactic and its fermented productions: dietary fiber, active polysaccharide, amino acid, vitamin, nucleotide, enzyme preparations, red kojic rice, sugar alcohol, polyunsaturated fatty acid, carotenoid, and active microelement.
