采用高效液相色谱法测定不同质量的苹果原料中富马酸含量 ,获得了不同加工工艺条件下富马酸变化趋势 。

Fumaric acid in different apple materials was determined by HPLC and the tendency of the change in fumaric acid under different technological conditions was reported. Moreover, some methods of controlling the excess of fumaric acid were put forward.
