早籼糯越糯2号酿制绍兴“加饭酒”研究 被引量:2

摘要 越糯 2号是绍兴市农科所选育的中熟早籼糯新品种 ,具有丰产、熟期适中、中抗稻瘟病、米质优良等特点 ,于 2 0 0 1年12月通过浙江省农作物品种审定委员会审定。用早籼糯越糯 2号酿制的绍兴“加饭酒”其酒精度、糖度、酸度等主要质量技术指标均符合绍兴酒的国家标准 ,样品酒请专家评委品评 ,一致认为 :口味清爽 ,酒体协调 ,风味好。该项研究已通过省级审定。 Yuenuo No.2,selected and bred by Shaoxin Agriculture Institute,was a new variety of mid-maturing early indica glutinous rice.It had much characteristics such as high yield,suitable maturity time,Meddle resistant to the blight of rice,excellent grain quality.And it was examined and approved by Zhejiang Crops Breeding Examination and Approved Committee in 2001.The main quality technology of Shaoxin 'Jiafan' wine such as alcohol degree,sugar degree and acidity degree are up to the national standard of Shaoxin wine.That made fermentation of early indica glutinous rice 'Yuenuo No.2'.After judging sample wine experts identify with other: taste was refresh,the spirits of wine was coordinate local favourity rice.This research has been examined and approved by the provincial committee.
