本研究制备的特殊用途微胶囊化粉末香精具有抗酸、碱、盐性 ,稳定性好 ,使用时具有乳化性能好 ,浑浊度高 ,速溶于水中的特性。本文根据微胶囊化粉末香精应具有的特性 ,对其原理和工艺。

The microencapsulated powder flavor has the following features:acid-resistance,alkali-resistance,salt-resistance,high stability,high turbidity,stable emulsification when used and instantly soluble in water. This thesis described the study on the principle,technology and formula of microencapsulated powder flavor.
