摘要 报导了用酶水解制备蚯蚓肽的研究.选择出酶水解制备蚯蚓肽的最佳条件是:胰酶和胃酶互相配合双酶水解,其胰酶的最适加酶量为125:2(原料重:酶重),最适作用时间为46~48h;胃酶的最适加酶量为5000:1(原料重:酶重),最适作用时间为3h.制备的蚯蚓肽经理化性质测定和营养价值的化学评价表明:该种肽可作为添加亮氨酸、异亮氨酸和酪氨酸的食品添加剂使用. The study of preparation of earthworm peptides byenzymolysis is reported. Best condition of prepartion of the peptides by enzymolysis chose is:Pancretin and pepsin cooperate mutually for enzymolysis of double enzyme.The most suitable amount of pancretin added is 125:2 (material weight,enzyme weight) and the most suitable time of action is 46-48h.That of pepsin are 5000:1 (material weight:enzyme weight) and 3h respectively.By the physical and chemical properties of the peptides prepared are determined and its evalua- tion of nutrition are appraised by chemical methods.This peptides can be used as a food additive for addition of leucine,isoleucine and tyrosine.
