摘要
本文以青鱼为研究对象 ,实验研究了其在高压静电场中冻结、解冻的过程。通过加电场以及改变电场强度大小 ,研究其冻结曲线和解冻曲线的变化 ;微生物指标的变化。实验结果表明高压电场对青鱼冻结、解冻过程均有明显的加速作用 ,并能有效的杀灭微生物。但是 ,当场强变化时 ,其对冻结、解冻影响的差异以及微生物指标的变化不明显。
The effect of High Electrostatic Voltage Field on the freezing and thawing process of the fish is studied in this paper.With the intensity of the electrostatic field changed,the freezing curve,the thawing curve and the number of the microbe are evaluated.The experimental data indicate that the High Electrostatic Voltage Field accelerates the freezing and thawing process,killing the microbe.However,the various intensities of the electrostatic field have different effects on the freezing,thawing process of the fish and the number of microbe.
