γ 氨基丁酸是一种非蛋白质氨基酸 ,对人体具有多种生理功能。植物性食品原料经适当处理 ,富集γ 氨基丁酸后 ,可作为制造功能性食品的原料。本文综述了食品原料中γ
aminobutyric acid,a kind of non protein amino acids,has the physiologic functions to human body.Food raw materials handled by accumulating γ aminobutyric acid can be used as the manufacturing function food.The latest research on the formation mechanism and accumulation technique of γ aminobutyric acid of food raw materials were summarized in this paper.
