大枣色泽与5-羟甲基糠醛含量相关性分析 被引量:12

摘要 目的 建立大枣中5-羟甲基糠醛(5-HMF)的高效液相色谱含量测定方法,对大枣色泽与5-HMF含量的相关性进行探索。方法 收集多种色泽的市售大枣及其制品,采用高效液相色谱法测定5-HMF 的含量。结果 大枣制品中5-HMF 的含量明显高于大枣中的含量,大枣中的5-HMF 含量为0.052~6.631 mg/100 g,大枣制品中为3.324~39.71 mg/100 g。随着大枣的色泽逐渐加深,5-HMF 的含量显著升高。结论 本研究建立了大枣及其制品中5-HMF 的高效液相色谱测定方法。大枣中5-HMF 的含量与色泽有关,建议优质大枣中5-HMF 的限量指标为1 mg/100 g。 Objective To establish an HPLC method for content determination of 5-hydroxymethylfurfural(5-HMF) in Jujubae Fructus; To explore the correlation between colors and 5-HMF contents. Methods Some samplesof Jujubae Fructus and the products with different colors were collected. The contents of 5-HMF were determined byHPLC. Results The contents of 5-HMF in Jujubae Fructus products are significantly higher than those in JujubaeFructus.The contents of 5-HMF were among 0.052–6.631 mg/100 g in Jujubae Fructus and 3.324–39.71 mg/100 gin Jujubae Fructus products. As the color gradually deepen, the content of 5-HMF increases significantly.Conclusion An HPLC determination method for 5-HMF in Jujubae Fructus was established. The contents of 5-HMFin Jujubae Fructus and its products are associated with colors. It is recommended that the limit content of 5-HMF inJujubae Fructus is 1 mg/100 g.
