摘要 动物性食品加工实验是一门重要的实践课程,对巩固大学生在课堂上所学的理论知识和提高学生解决实际问题的能力,具有非常重要的促进作用。创新性实验教学的开展是高校培养创新型人才的有效载体,是加强大学生素质教育、提高大学生科技创新能力的重要途径。现代研究型大学无不把大学生的科研实验活动纳入整体的课程体系,成为现代研究型大学的基本特征。本文描述了动物性食品加工课程的现状,论述了该课程的教学特点和存在问题,并依据其课程结构特点提出了具有指导意义的创新性实验教学模式。详细阐述了教学中采用基础教学型实验、自主产品开发型实验和综合研究型实验三种模式,强调学生自行设计实验方案,充分调动学生学习的积极性和兴趣,可取得优越的教学效果。 Animal food processing experiment is an important practical courses for students,especially in the consolidationof the theoretical knowledge or improving students' ability to solve practical problems.The innovative experimentis to cultivate innovative talents effective carrier,also an important way to strengthen students' quality educationand improve the technological innovation.The modern university includes almost all of the scientific experiments intothe curriculum,which becoming a basic feature of modern research university.This paper described the status of animalfood processing course,including the teaching characteristics and existing problems.According to the structural characteristicsof the curriculum,innovative experimental teaching model has been proposed.We elaborated on the basis ofteaching used in the three model teaching experiment,such as independent experiment,product development andcomprehensive research experiment.Educator can get excellent teaching effect by emphasis on student self-designed experimentalprogram,fully mobilize the enthusiasmand interest in learning.
