摘要
以人参茎叶皂苷为主要功能因子,添加牛磺酸、人参提取物为辅助功能因子以及酸味剂、甜味剂等配料,开发出一种具有抗疲劳功效的功能饮料。通过单因素及正交实验优化其产品配方。结果表明功能饮料最佳配方为:人参茎叶皂苷提取物添加量0.5%,人参提取液添加量9.5%,柠檬酸添加量0.425%,蔗糖添加量为8%,牛磺添加量0.4g/kg,VB1添加量50mg/kg、VB2添加量50mg/kg、VB6添加量为50mg/kg,VC添加量为1.0g/kg。
In this study, the main functional factors of ginseng stem and leaf saponins, taurine, ginsengextract as the auxiliary function factor as well as sour agent, sweeteners and other ingredients, develop a kind offunctional beverage with anti fatigue effect. Optimize the product formulation by single factor and orthogonalexperiment. The results show that functional drinks the optimal formula was: ginseng stem leaf saponin extractdosage is 0.5%, ginseng extract addition amount to 9.5%, citric acid addition to 0.425%, sucrose 8% taurinewas added 0.4 g/kg, VB1 addition 50 mg/kg, VB2 adding 50 mg/kg, VB6 dosage is 50 mg/kg, the dosage of VCis 1.0 g/kg.
