响应面法优化怀山药水溶性蛋白提取工艺的研究

摘要 以怀山药为原料提取水溶性蛋白,以水料比、提取温度、提取时间为考察因素,以蛋白含量为响应值,采用响应面分析法,比较水料比、提取温度、提取时间及提取次数对其提取率影响。确定最佳工艺条件:水料比8.25∶1,提取温度35.18℃,提取时间60.26 min,提取次数1次,提取率可达到64.9%。 Water-soluble protein was extracted from Dioscorea Opposita Thunb.The effects of solventmaterial ratio,extraction temperature,extraction time,extraction times and their effects on the yield of watersoluble protein were studied.Based on the results of single factor test,the yield response was analyzed using method of response surface analysis.The optimal condition was as follows:solvent-material ratio8.25,extraction temperature35.18℃,extraction time60.26min,and extracting1time.Under this condition,the extraction yield of water-soluble protein was64.9%.
