案例教学法在《食品加工》课程教学中的应用与探究

摘要 案例教学法是一种运用真实或模拟案例进行教学的方法,它在激发学生创造性思维、提高分析和决策能力方面具有不可替代的优点。《食品加工》是该院对《食品工艺学》这门专业必修课的延伸,课程目的是使学生掌握各类食品的加工,课程实践性和应用性较强。文章阐述了案例教学法在《食品加工》课程教学中的必要性、可行性和应用初探,以期改进该课程的教学效果。 The case-based study is a teaching method based on real or simulated cases, and it has irreplaceable advantages in stimulating learner’s creative thinking ability, enhancing analysis and decision making ability. Food processing is an extension study of Food technology, the course aim of it is to train the students master the processing of all kinds of food, and it involves wide knowledge and with a strong practicality and applicability. In this study, the current application situation of using case-based study method on food processing was analyzed, the necessity and feasibility of it were discussed. And the main purpose of this study was to improve the teaching effect of food processing.
